Black-Eyed Pea (Bean) Salad

Servings: 4 people
- 250 g black-eyed peas (beans)
- 1 onion
- 35 g coriander
- 20 g dill
- 50 g walnuts
- 1 lemon
- 1 red pepper
- 1 tsp salt
- 1 tbsp olive oil
Put the beans in a large mixing bowl and fill up with cold water until covered. Leave the beans to soak in the water for at least 10 minutes.
Drain the beans and boil in a pot for 40 minutes, or until softened.
While the beans boil, dice the fresh ingredients finely and combine in a salad bowl, adding the lemon juice, salt and olive oil seasonings too. Drain the beans once boiled and add into the salad after it cools down. Enjoy!
