Black-Eyed Pea (Bean) Salad

Ingredients

  • 250 g black-eyed peas (beans)
  • 1 onion
  • 35 g coriander
  • 20 g dill
  • 50 g walnuts
  • 1 lemon
  • 1 red pepper
  • 1 tsp salt
  • 1 tbsp olive oil

Instructions

  • Put the beans in a large mixing bowl and fill up with cold water until covered. Leave the beans to soak in the water for at least 10 minutes.
  • Drain the beans and boil in a pot for 40 minutes, or until softened.
  • While the beans boil, dice the fresh ingredients finely and combine in a salad bowl, adding the lemon juice, salt and olive oil seasonings too. Drain the beans once boiled and add into the salad after it cools down. Enjoy!
