Delicious Beetroot and Garlic Salad
Beetroot is overlooked far too often. It's one of my favourite veggies and I pair it with my dinner regularly. This recipe makes a tasty salad out of the beetroot, with very few seasonings. It's incredibly easy to make - I promise that you'll LOVE this recipe.
Servings: 3 people
- 4 beetroots
- 1/2 lemon squeezed
- 2 tbsp olive oil
- 1 clove garlic
- 1 tsp salt
Peel beetroot and boil in a pot of boiling water for around 40 minutes, or until softened.
Dice into small cubes and place in a mixing bowl. Combine with lemon juice, crushed garlic, salt and olive oil. Enjoy!
