Foolproof Banana Bread Loaf
This is a tasty and simple banana bread recipe and my absolute favourite way to use up ripe bananas. I've been using this recipe for years and is spectacularly delicious every single time. You can also freeze it too!

Servings: 12 slices
- 2-3 ripe bananas about 160g peeled weight
- 140 g butter softened
- 140 g caster sugar
- 2 medium size eggs
- 140 g self-raising flour
- 1 tsp baking powder
Plus:
- oil to grease tin
- walnuts to decorate
Preheat the oven to 180°C/356°F/gas mark 4 and grease a loaf tin (2 lb) with oil.
Mash the banana and put to the side. In a large mixing bowl, beat the butter and sugar until combined.
Add in the eggs, one at a time, beating constantly. Beat until fully combined and mixture is soft.
Fold in the flour, baking powder and banana.
Pour into the tin and bake for 45-55 minutes, or until a skewer can be inserted and removed cleanly. Allow to cool before removing from the tin. Enjoy!
