- 13 new potatoes about 750 g
- 200 g plain flour
- 1 tsp salt
- 1/2 tsp black pepper
- 115 g butter softened to room temperature
- 130 g cheddar grated
- 130 g mozzarella grated
- 50 ml vegetable oil for frying
Boil potatoes in a large pot for 40 minutes, or until softened. Drain the potatoes and peel once cooled. Mash them in a large mixing bowl, and add salt, black pepper, the flour and the butter. Mix by hand to combine.
Mix the cheddar and mozzarella in a small bowl. Form the potato mixture into balls or discs, no thicker than 2 inches in size. Put some of the cheese mixture inside each ball/disc.
Heat up a pan with the oil in it. Once heated place the potato bites inside, cooking in batches if necessary. Cook for 4 minutes on each side, or until golden and cooked. Enjoy!
