Banana bread recipe - very easy

This is a tasty and simple banana bread recipe and my absolute favourite way to use up ripe bananas. I’ve been using this recipe for years and is spectacularly delicious every single time. You can also freeze it too!

What’s the trick to a perfect banana bread? Keep it simple! Don’t overcomplicate with the ingredients or the equipment. With ingredients, it’s really important not to add anything that will overpower the banana’s flavour. Walnuts work really well to compliment the banana, but it’s best to not add too much. 

With equipment, its really important to use a metal pan rather than a ceramic or glass one. I’ve actually tried this recipe with both a ceramic and glass pan and the bread never rises properly as they conduct heat completely differently than a metal pan does. Stick with metal! I’ve learnt the hard way…

How to make the banana bread?

Preheat the oven to 180°C/356°F/gas mark 4 and grease a loaf tin (2 lb) with oil.

Mash the banana and put to the side. In a large mixing bowl, beat the butter and sugar until combined. Add in the eggs, one at a time, beating constantly. Beat until fully combined and mixture is soft.

Fold in the flour, baking powder and banana. Pour into the tin and bake for 45-55 minutes, or until a skewer can be inserted and removed cleanly. Allow to cool before removing from the tin. Enjoy!

  • 2-3 ripe bananas about 160g peeled weight
  • 140 g butter softened
  • 140 g caster sugar
  • 2 medium size eggs
  • 140 g self-raising flour
  • 1 tsp baking powder

Plus:

  • oil to grease tin
  • walnuts to decorate

Instructions

  • Preheat the oven to 180°C/356°F/gas mark 4 and grease a loaf tin (2 lb) with oil.
