The Simple Ingredients:

I love this recipe because of how simple it is. I prefer using mozzarella and cheddar when I make these potato bites, but feel free to use whatever cheese you have at home! I often use some parmesan too if I have any leftover. 

You can also add some chives or crushed garlic in with the potato batter if you prefer. This recipe allows for all sorts of adjustments. I chose to keep this dish simple, but feel free to add whatever you like!

How to make the potato bites?

Start by boiling the potatoes in a large pot, for around 40 minutes, or until softened. Once boiled, drain the water and fill up with cold water so that the potatoes can cool down faster. Once cooled, peel the potatoes. 

In a large mixing bowl mash the potatoes. Once mashed, add in the salt, black pepper, flour and butter. I prefer to mix these ingredients into the potato batter by hand, with a glove. I find that it mixes in much easier. 

In a separate bowl, combine the cheddar and mozzarella filling. Form the potato batter into ball or disc shaped bites, making sure that they are absolutely no thicker than 2 inches in width. Fill up each bite with the cheese mix. 

Heat up a pan with the oil. When hot, place the bites in the pan to cook – cooking in batches if you have to. Cook each side of the bite for around 4 minutes in the oil, or until golden and cooked. Place in a bowl with a paper towel in when out of the oil so that the bites can dry off. Enjoy!

Ingredients

  • 13 new potatoes about 750 g
  • 200 g plain flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 115 g butter softened to room temperature
  • 130 g cheddar grated
  • 130 g mozzarella grated
  • 50 ml vegetable oil for frying

Instructions

  • Boil potatoes in a large pot for 40 minutes, or until softened. Drain the potatoes and peel once cooled. Mash them in a large mixing bowl, and add salt, black pepper, the flour and the butter. Mix by hand to combine.
  • Mix the cheddar and mozzarella in a small bowl. Form the potato mixture into balls or discs, no thicker than 2 inches in size. Put some of the cheese mixture inside each ball/disc.
  • Heat up a pan with the oil in it. Once heated place the potato bites inside, cooking in batches if necessary. Cook for 4 minutes on each side, or until golden and cooked. Enjoy!
