You can make this gorgeous shish kofte at home with a grill pan or a griddle, or even outside on the BBQ grill! It’s a simple recipe that tastes irresistibly delicious and flavourful. You have to give this one a try!
The Simple Ingredients:
The ingredients are incredibly simple. I find that including onion, garlic and fresh parsley are essential to bring out the flavour of the kofte. I also add salt, cumin, black pepper and my go-to secret ingredient – sun-dried tomato paste.
On each shish I add slices of peppers, onions or button mushrooms. Adding these make the kofte look so much more appealing – and it’s always a treat getting to eat some grilled veggies too!
I always use wooden shish sticks when making kofte. They don’t have to be too long, around 20 cm (8 inches) is perfect.
How to make the kofte?
Dice the onion and parsley, and crush the garlic. Add these to the lamb mince, along with the tomato paste, salt, cumin and black pepper. You should mix this by hand until combined, kneading the mince in a dough-like manner. Aim to do this for around 10 minutes.
Cover the mince with cling film (saran wrap) and leave in the fridge for at least 2 hours, but ideally overnight. This is to increase the flavour and to ensure the ingredients blend together in the kofte. The longer the mince waits in the fridge, the better.
Once out of the fridge, spread out the mince evenly on each shish stick. Do so by forming the meat into balls and skewering onto the shish. You can add chopped vegetables in between each shish. You can form the mince into whatever shape or size you wish, but aim to make each kofte the same so that they cook evenly.
Lightly brush the vegetable oil on the exterior of each shish. You do not need much oil, this is just to avoid the shishes sticking to the grill.
Cook on a grill pan, griddle or BBQ grill – your choice. Cook for around 5 minutes on each side, or until kofte is fully cooked through and seared. Enjoy!

- 40 g parsley
- 1 onion
- 2 cloves garlic
- 1 tsp salt
- 1/2 tsp cumin
- 1/2 tsp black pepper
- 20 g sun-dried tomato paste
- 1 tbsp vegetable oil
Instructions
- Dice the onion and parsley, and crush the garlic. In a mixing bowl, add these to the lamb mince, along with the tomato paste, salt, cumin and black pepper. Mix until all ingredients are combined.
- Cover the mixing bowl with cling film (saran wrap) and leave in the fridge for at least 2 hours, ideally overnight.
- Spread out the mince evenly on each shish stick. Do so by forming the meat into balls and skewering onto the shish. You can add chopped vegetables in between each shish.
