Fisherman's Salad (Vegan)
Fisherman's Salad is never spoken about enough. This salad is good enough to eat on its own for a quick and healthy lunch or dinner fix. With a seasoning so delicious and irresistible, I often forget I'm eating a salad in the first place.
Servings: 4 people
- 3 tomatoes
- 1 onion
- 1/2 lemon squeezed
- 6 g basil
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1/2 tsp salt
Slice the onions finely - the thinner the better! I often find that onions have their best flavour and take in most seasonings when they are sliced as finely as possible, and are incredibly flimsy.
In a salad bowl combine the onions and salt, rubbing in the salt to spread it thoroughly over all of the onions. Once the onions are fully coated, squeeze any excess water from the onions and leave to the side.
Dice the tomatoes into large chunks, about half an inch in size. Slice the basil leaves finely, or leave whole if you prefer. Add the chopped tomato and the basil into the bowl with the onion. Add in the squeezed lemon, olive oil and soy sauce. Toss the salad until it is fully coated with all of the seasonings. Enjoy!
