Hearty Pea and Potato Stew

Peas are a brilliantly simple vegetable to cook and enjoy, with some great health benefits, too. This recipe is particularly great as it allows you to use up any vegetables lying around in your kitchen or fridge. This is how I make a pea and potato stew for my family mealtimes.

Ingredients

  • 430 g garden peas just over 2 cups
  • 1 onion 95 g when diced
  • 1 red pepper 150 g when diced
  • 1 carrot 75 g when diced
  • 3 new potatoes 145 g when diced
  • 1 clove garlic
  • 1 tbsp sun-dried tomato paste heaped
  • 4 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cumin
  • 125 ml boiling water just over half a cup

Instructions

  • In a large pot combine the onions and olive oil. Cook until onions are softened. Add the tomato paste and crushed garlic and stir thoroughly. Add the potatoes, pepper, carrots and boiling water and close the lid on the pot. Allow to simmer for 5 minutes.
  • Add the peas, salt, black pepper and cumin. Allow to cook with lid for 25 minutes. Let the pot rest for 5 minutes with the lid on. Enjoy!
