Peas are a brilliantly simple vegetable to cook and enjoy, with some great health benefits, too. This recipe is particularly great as it allows you to use up any vegetables lying around in your kitchen or fridge. This is how I make a pea and potato stew for my family mealtimes.
The Simple Ingredients:
The essentials for this pea and potato stew are sun-dried tomato paste, onion and garlic. The rest are complimentary. I usually add carrots and pepper as I always have some lying around in the vegetable drawer that need using up! You can also add a tomato, parsley, mint, celery or even some chopped or minced lamb.
It really depends on your preference, but this is a very rich dish that you can personalise according to your taste!
You can also use frozen peas, the recipe works just the same. I used frozen peas in the above picture and it was delicious – no defrost required!
How to cook the stew?
Cook and caramelise the onions with the olive oil in a large pot for a few minutes. You want them at least slightly brown for more flavour.
Next add the sun-dried tomato paste and let this cook also. Be sure to mix the tomato paste continuously, as it can stick to the bottom of the pot.
Add the crushed garlic and mix, allowing the garlic to cook thoroughly.
Now add your vegetables – all except the peas. Here is where I add the pepper, potatoes and carrots. Add the boiling water in also and close the lid on the pot. Let it simmer for 5 minutes.
After that at the garden peas, salt, black pepper and cumin into the pot. Close its lid again and leave to cook for 25 minutes.
After the 25 minutes it’s best to leave the pot to rest for at least 5 minutes. After that, enjoy!
Hearty Pea and Potato Stew
Ingredients
- 430 g garden peas just over 2 cups
- 1 onion 95 g when diced
- 1 red pepper 150 g when diced
- 1 carrot 75 g when diced
- 3 new potatoes 145 g when diced
- 1 clove garlic
- 1 tbsp sun-dried tomato paste heaped
- 4 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cumin
- 125 ml boiling water just over half a cup
Instructions
- In a large pot combine the onions and olive oil. Cook until onions are softened. Add the tomato paste and crushed garlic and stir thoroughly. Add the potatoes, pepper, carrots and boiling water and close the lid on the pot. Allow to simmer for 5 minutes.
- Add the peas, salt, black pepper and cumin. Allow to cook with lid for 25 minutes. Let the pot rest for 5 minutes with the lid on. Enjoy!
