Menemen - Turkish Eggs with Tomato
This is the tastiest breakfast dish I have ever made. Menemen is a classic Turkish breakfast meal with an incredibly simple recipe. Not only does it look fabulous, it's also rich with flavour and makes a healthy and filling start to your day.

Servings: 4 people
- 4 eggs
- 4 peppers about 200 g
- 4 tomatoes about 450 g
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp olive oil
Cook the peppers in the oil in a pan over medium heat for around 5 minutes, or until softened. Add the tomatoes and cook for another 5 minutes, or until softened. Add the seasonings and mix thoroughly.
Crack the eggs in a separate bowl and pour into the pan. Close the lid of the pan and cook for 5 minutes on low heat, or until the eggs are cooked. Enjoy!
