This is the tastiest breakfast dish I have ever made. Menemen is a classic Turkish breakfast meal with an incredibly simple recipe. Not only does it look fabulous, it’s also rich with flavour and makes a healthy and filling start to your day.
The Simple Ingredients:
Eggs, tomato and pepper. Beyond that it’s really up to you! I always sprinkle some chives on top for extra flavour and the appearance. The seasonings I always add are salt, black pepper and paprika. Again with the seasonings it really is up to you and your preference as to what you add.
You can also add onion, but I prefer not to as I don’t tend to want to have onions at breakfast. To each their own!
How to make the menemen?
Start by chopping the peppers finely. Cook them in the oil in a medium-sized pan over medium heat for around 5 minutes, or until the peppers have softened.
Whilst the peppers cook, peel and chop the tomatoes. Peeling is ideal for cooking tomato. You want to add your chopped and peeled tomatoes into the pan and cook for another 5 minutes, until softened. Remember to mix thoroughly.
Add the seasonings once the tomatoes are cooked and mix in well. Next, crack the eggs in a separate bowl and pour into the pan.
You shouldn’t crack the eggs straight into the pan as they will cook at different paces and you want to be able to control the positioning of the eggs as much as you can – try and keep them spread out away from each other!
Make sure your pan is now on low heat. Cover with a lid for 5 minutes and let the eggs cook through. You can sprinkle with chives to decorate. Enjoy!
Menemen - Turkish Eggs with Tomato
Ingredients
- 4 eggs
- 4 peppers about 200 g
- 4 tomatoes about 450 g
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 2 tbsp olive oil
Instructions
- Cook the peppers in the oil in a pan over medium heat for around 5 minutes, or until softened. Add the tomatoes and cook for another 5 minutes, or until softened. Add the seasonings and mix thoroughly.
- Crack the eggs in a separate bowl and pour into the pan. Close the lid of the pan and cook for 5 minutes on low heat, or until the eggs are cooked. Enjoy!
