Hearty autumnal cabbage dish

As the Autumn months approach I often try to incorporate different ingredients into my cooking such as cabbage. For me, this is the ONLY way to cook cabbage! The Simple Ingredients:

Ingredients for recipe: cabbage, carrots, onion, tomato, tomato paste and seasonings.

I enjoy combining the cabbage with carrots and tomatoes to add to its flavour. You can use anything else you like such as leeks, diced potatoes or pepper. Just make sure not to add any water to the cabbage! It’s water that brings out that signature sulfur smell of the cabbage. 

How to make the cabbage?

Either grate or finely slice the cabbage and the carrots. Dice the onions. Brown the onions in the olive oil in a large saucepan. Leave the pan on low heat with the lid on for 5 minutes. Add the tomato paste and cook for 2 minutes until the paste browns, mixing thoroughly.

Add the cabbage and all of the seasonings. Mix until the seasonings spread evenly throughout the food and close the lid on the pan for 30 minutes. It’s really important not to add any water! The cabbage will gain an odorous taste and smell. To avoid needing any water, keep the lid on and the heat low.

  • 1/2 white cabbage 560 g
  • 3 carrots
  • 1 onion
  • 4 tbsp olive oil
  • 1 1/2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp red pepper flakes
  • 1 1/2 tbsp sun-dried tomato paste

Instructions
