Ingredients

  • 4 large sweet potatoes
  • 1 tsp salt
  • 6 tbsp olive oil
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp oregano
  • 1/4 lemon juice

Instructions

  • Preheat your oven to 220°C/425°F and line a baking sheet with parchment paper.
  • In a large mixing bowl, toss the sweet potato cubes with the herbs, oil and lemon juice. Make sure each piece is evenly coated.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet, making sure they aren’t too crowded. This will help them roast evenly and become crispy.
  • Roast for 25-30 minutes, turning the potatoes halfway through, until they are golden brown and caramelized on the edges.
