- 4 large sweet potatoes
- 1 tsp salt
- 6 tbsp olive oil
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp oregano
- 1/4 lemon juice
Preheat your oven to 220°C/425°F and line a baking sheet with parchment paper.
In a large mixing bowl, toss the sweet potato cubes with the herbs, oil and lemon juice. Make sure each piece is evenly coated.
Spread the sweet potatoes in a single layer on the prepared baking sheet, making sure they aren’t too crowded. This will help them roast evenly and become crispy.
