Radish and Carrot Salad

This is hands down the best way to eat radishes. Grate it up and add in some carrots - it immediately becomes a delicious salad to enjoy on a nice summers day, or a healthy lunch!

Ingredients

  • 4 carrots
  • 750 g radish
  • 1 lemon
  • 1 tsp salt
  • 3 tbsp olive oil

Instructions

  • Grate the radishes and the carrot. Place in a large mixing bowl and add the salt. Leave to the side for 30 minutes and drain any excess water.
  • Squeeze the lemon juice in and add the olive oil. Mix thoroughly. Enjoy!
