This is hands down the best way to eat radishes. Grate it up and add in some carrots – it immediately becomes a delicious salad to enjoy on a nice summers day, or a healthy lunch!

I always add in carrots – I feel like it’s such an amazing accompaniment to the radishes. To season the salad lemon is essential. It brings out huge amounts of flavour.
As always season with olive oil and salt to taste, this recipe has the amounts that I usually use for this salad.
How to make the salad?
Wash and grate the radishes and the carrots and put them in a large bowl. Add in the salt and mix through.
Leave the grated vegetables to sit in the salt for around thirty minutes. The salt will get all of the excess water out, and if you skip this step you could be left with an incredibly soggy salad. Don’t fear! The water does not need to go to waste. Drain the water out into a cup and it becomes a pretty tasty and healthy drink. Try it!
Once drained, add in salt and olive oil. Mix thoroughly. Enjoy!
Radish and Carrot Salad
Ingredients
- 4 carrots
- 750 g radish
- 1 lemon
- 1 tsp salt
- 3 tbsp olive oil
Instructions
- Grate the radishes and the carrot. Place in a large mixing bowl and add the salt. Leave to the side for 30 minutes and drain any excess water.
- Squeeze the lemon juice in and add the olive oil. Mix thoroughly. Enjoy!
