In a large pot, sauté the onions with olive oil under high heat, mixing regularly. Once sautéed, add the tomato paste and cook together for a couple of minutes, mixing regularly.
Next, turn down the heat to a medium setting and add the tomatoes. Keep mixing and cooking until tomatoes are softened.
Add the parsley and cook until it has softened.
Add the seasonings, bulgur wheat and the boiling water. Cover with lid and leave to simmer on the medium heat for 8-10 minutes. Then remove the lid and let simmer for another 8-10 minutes, or until all water has been absorbed. Enjoy!
