Tomato and Bulgur Pilaf

Ingredients

  • t finely diced onion 95 g
  • 2 finely diced tomatoes 217 g
  • 245 g bulgur wheat
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 8 g parsley
  • 1 tsp sun-dried tomato paste 12 g
  • 4 tbsp olive oil
  • 2 cups boiling water 473 ml

Instructions

  • In a large pot, sauté the onions with olive oil under high heat, mixing regularly. Once sautéed, add the tomato paste and cook together for a couple of minutes, mixing regularly.
  • Next, turn down the heat to a medium setting and add the tomatoes. Keep mixing and cooking until tomatoes are softened.
  • Add the parsley and cook until it has softened.
  • Add the seasonings, bulgur wheat and the boiling water. Cover with lid and leave to simmer on the medium heat for 8-10 minutes. Then remove the lid and let simmer for another 8-10 minutes, or until all water has been absorbed. Enjoy!
