Bulgur pilaf is a classic Turkish staple and I love eating it at restaurants – it’s just sooo tasty. Seriously.
But whenever we eat this pilaf at a takeout I always feel a slight bit guilty knowing that it really isn’t the healthiest side dish. I created this recipe to get both a tasty AND healthy bulgur pilaf.
The Simple Ingredients:
The ingredients are super simple and the main components are onion, tomato and bulgur wheat. The rest of the herbs or additions of other vegetables are interchangable. The best thing to do is experiment if you want to add something extra.
In my opinion the best addition to this pilaf is spice! Spice goes beautifully well with this pilaf and is definitely worth a try. I’m not the biggest spice fiend so I did not include it in this recipe. I reckon around 1-2 teaspoons of chilli powder could give it a gorgeous kick. Give it a go!
Tomato and Bulgur Pilaf
Ingredients
- t finely diced onion 95 g
- 2 finely diced tomatoes 217 g
- 245 g bulgur wheat
- 1/2 tsp cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
- 8 g parsley
- 1 tsp sun-dried tomato paste 12 g
- 4 tbsp olive oil
- 2 cups boiling water 473 ml
Instructions
- In a large pot, sauté the onions with olive oil under high heat, mixing regularly. Once sautéed, add the tomato paste and cook together for a couple of minutes, mixing regularly.
- Next, turn down the heat to a medium setting and add the tomatoes. Keep mixing and cooking until tomatoes are softened.
- Add the parsley and cook until it has softened.
- Add the seasonings, bulgur wheat and the boiling water. Cover with lid and leave to simmer on the medium heat for 8-10 minutes. Then remove the lid and let simmer for another 8-10 minutes, or until all water has been absorbed. Enjoy!
