This Oven-Baked Kofte Recipe is a favourite amongst my family and friends! It’s a simple and basic recipe that’s bursting with flavour. Here is all you need to know to make your own kofte bake at home!
The Simple ingredients:
This recipe really doesn’t need much. Herbs, onion and garlic are enough to bring out the gorgeous flavour of this dish. I especially like an oven dish because I can throw it all in the tray and let it cook on its own – super low-maintenance.
The most important aspect is using fresh parsley – it really makes such a big difference for the flavour!
How to make the kofte?
Dice the onion and parsley finely. If you struggle to dice very finely, put it in an electric blender to mix. If you use a blender make sure you blend the onions first and drain out any excess water from the onion.
In a large mixing bowl, combine the crushed garlic, onion, parsley, mince meat and seasonings. Knead this mixture until fully combined. I wear a food safe glove, and I try to use a lot of strength to mix and knead it properly.
Roll the meat into small balls. Use some cold water on your hands if the mixture becomes too sticky.
Preheat the oven to 180°C/356°F/gas 4. Peel and chop the potatoes into chunks, no bigger than an inch in size. Place the potatoes at the bottom of a baking tray, and place the meatballs on top.
In a measuring jug mix boiling water and sun-dried tomato paste, until the paste has softened into the water. Pour this all over the potatoes and kofte in the tray.
Cover with aluminium foil and bake in the oven for 50 minutes. After 50 minutes, remove the foil and bake for another 15 minutes, or until the kofte is seared. Enjoy!
