This zucchini and potato bites recipe makes my mouth water every single time. It’s such an underrated recipe, perfect for a picnic, appetizer, or a unique side dish. You have to give this one a try!
The Simple Ingredients:
The ingredients are very simple, and incredibly healthy. You can of course bake this recipe in the oven, or in the air fryer. In my instructions I provide detail on frying in oil. If you don’t want to fry in oil I recommend making smaller sized bites, so that they can cook faster.
I recommend around 40 minutes in the oven at 180°C/356°F/gas 4, and for 20 minutes in the air fryer at 200°C/392°F/gas 6.
How to make the Zucchini Bites?
Grate the potatoes, carrots and zucchini finely. Place in a bowl and add in the salt. Let the vegetables sit in the salt for 5 minutes, so that the excess water can come out. Drain the vegetables and squeeze with a paper towel to ensure they are dry.
Once the vegetables are properly drained, you can add the eggs, flour, dill, parsley, chives, crushed garlic, cumin and black pepper. Mix thoroughly. I always mix by hand, with a glove. I find it much easier to ensure that all of the ingredients are fully combined.
Next split the mixture into small balls or discs, whatever you prefer. Just make sure that they are no thicker than 2 cm in width (less than an inch). This is to ensure that they cook properly and fairly quickly.
Heat some oil in a pan for a couple of minutes and start placing the bites in to cook. Flip them over to ensure that they are fully cooked through. Cook for 10 minutes, or until the bites become crispy and golden. Once out of the oil place on a paper towel to dry and dap off any excess oil. Enjoy!
Zucchini Bites (Mücver)
Ingredients
- 5 potatoes about 1 kg
- 2 eggs
- 100 g plain flour
- 4 zucchinis about 700 g
- 4 carrots about 190 g
- 20 g dill
- 40 g parsley
- 10 g chives
- 1 tsp salt
- 1/2 tsp cumin
- 1/2 tsp black pepper
- 2 cloves garlic
Instructions
- Grate the carrots, zucchini and potatoes. Add the salt, then drain the excess water out of all vegetables. Add the flour, eggs, dill, parsley, chives, cumin, black pepper and garlic. Mix until fully combined, preferably by hand.
- Form the mixture into balls, or disc shaped bites, no thicker than 2 cm in width (less than an inch). Heat a saucepan with oil for a couple of minutes, then add the bites.
- Flip them over to ensure all sides are cooked properly. Cook for 10 minutes, or until the crust is crispy and golden. Enjoy!
