The Simple Ingredients:
I think it’s really important to use fresh ingredients with this salad, especially when it comes to the flat-leaf parsley and dill herbs. The use of fresh herbs gives the salad a stronger and richer taste than using dry herbs.
I also love adding walnuts! It adds a completely new texture into the mix and really adds flavour to the salad. I’d recommend to dice all of the ingredients as finely as you can, so that the flavours can really blend together.
How to make the salad?
Put the beans in a large mixing bowl and fill up with cold water until covered. Leave the beans to soak in the water for at least 10 minutes.
Letting the beans sit in water will soften them as they absorb the water. This is a vital step before the beans are boiled, as it prevents them from breaking apart.
Once soaked, boil the beans in a pot for 40 minutes, or until softened. Once the beans cook, drain them and leave them to cool.
Meanwhile, dice the fresh ingredients finely and combine in a salad bowl, adding the lemon juice, salt and olive oil seasonings too. Add the beans into the salad after it cools down. Enjoy!

Ingredients
- 250 g black-eyed peas (beans)
- 1 onion
- 35 g coriander
- 20 g dill
- 50 g walnuts
- 1 lemon
- 1 red pepper
- 1 tsp salt
- 1 tbsp olive oil
Instructions
- Put the beans in a large mixing bowl and fill up with cold water until covered. Leave the beans to soak in the water for at least 10 minutes.
- Drain the beans and boil in a pot for 40 minutes, or until softened.
- While the beans boil, dice the fresh ingredients finely and combine in a salad bowl, adding the lemon juice, salt and olive oil seasonings too. Drain the beans once boiled and add into the salad after it cools down. Enjoy!
