This tomato pasta is my go-to dinner recipe. I always make it using only one pan. It’s so incredibly quick and easy to make yet so so so delicious. Everyone that tries this pasta recipe has told me how much they were obsessed with it. This is all you need to know to make the PERFECT tomato pasta every single time.
The Simple Ingredients:
The seasonings I add every single time are – salt, black pepper, rosemary, thyme and red pepper flakes. This creates a beautiful combination of flavour. You can make switches with oregano, coriander and paprika too.
Fresh tomatoes and peppers also make a world of difference. I highly recommend using fresh tomatoes rather than canned if you can.
How to make the pasta and its sauce?
You only need one pan for this recipe. Start by frying the onions with olive oil until they have caramelised. Next, brown the garlic, and then the sun-dried tomato paste. Make sure to mix regularly to avoid paste sticking to the pan.
Next, add add the finely diced peppers. Continue mixing thoroughly, and cook for a couple of minutes, or until the pepper has softened. Repeat this process with the peeled and diced tomatoes too.
Once the peppers and tomatoes have softened, add the seasonings, pasta and boiling water. Check the pasta’s instructions for exact cooking time. Mine was 12 minutes on the packet so I cooked for 12. When cooking, make sure to cover the saucepan with a lid as to not lose any of the water.
By the end of the cooking time, once the lid is removed, your pasta will be cooked and will have soaked up the water perfectly. I always leave the pasta to rest for a couple of minutes too, just so that it can soak up the sauce. I serve with parmesan, basil or parsley. It goes down a treat.
The Most Gorgeous Tomato Pasta Recipe
Ingredients
- 150 g penne pasta or 2 servings
- 410 ml boiling water or 1.75 cups
- 2 peppers
- 2 tomatoes peeled and diced
- 1 onion
- 1 clove garlic
- 2 tbsp olive oil
- 1 tsp sun-dried tomato paste heaped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 1/2 tsp red pepper flakes
- 1/2 tsp rosemary
- 1/2 tsp thyme
Instructions
- In a large saucepan, cook the onions with the olive oil until brown. Next brown the garlic, and then the sun-dried tomato paste.
- Cook the peppers for a couple of minutes, or until softened. Add the tomato and cook until softened.
- Add the seasonings, pasta and boiling water. Cover saucepan with lid and cook following the instructions of your pasta. Remove lid every couple of minutes to mix pasta, so that it does not stick to the pan as it cooks.
- Allow to rest for 5 minutes. Enjoy!
