Broccoli is best served with soy! Right? Well everyone that’s tried this recipe seems to agree! This is how I make a pan-fried soy broccoli at home, perfect for a veggie side dish at dinner, or a quick lunch.
The Simple Ingredients:
The onion is so so essential to this recipe. Broccoli usually gives off a super potent odour when cooking – strong enough to put me off the dish sometimes! By adding onion to this recipe, you’re almost cancelling out that smell coming from the broccoli, or at least I think so.
I think it really makes a difference, and with this recipe, I’ve never come across that smell when cooking my broccoli.
I once was planning to make this recipe for a friend coming over for dinner but she really doesn’t like eating onions. If you are the same then do not despair! Switch out the onions for some crushed garlic and it’ll serve the same purpose – no more smelly broccoli!
How to make the broccoli?
Slice the onions finely, keeping them as long strips. I usually chop the onion in half after peeling, then make fine slices from the edge of the onion.
Chop the broccoli too – and don’t leave out the stem! Make the broccoli sections no larger than an inch in size. Smaller sections will be even more flavourful. As for chopping the stem, keep it thin as it has quite a tough texture and you want it to cook at the same time as the softer parts of the broccoli.
Start browning the onions in the olive oil under medium heat, in a medium-sized frying pan. Do not fully caramelise the onions.
Add in the broccoli and the soy sauce and turn down the heat to a low setting. Cook for 15 minutes on this low heat, or until all of the soy sauce has been absorbed and the broccoli has softened. Mix occasionally as you cook. Enjoy!
