Beetroot is overlooked far too often. It’s one of my favourite veggies and I pair it with my dinner regularly. This recipe makes a tasty salad out of the beetroot, with very few seasonings. It’s incredibly easy to make – I promise that you’ll LOVE this recipe.
The Simple Ingredients:
The ingredients are very simple – I dress the salad with some lemon, crushed garlic, salt and some olive oil. There isn’t much needed to bring out the flavour of the beetroot.
Nearly every time I have made this salad I have used pre-cooked beetroots – they’re just so much easier and more practical. However this recipe has instructions for the entire process of using raw beetroots. When boiling the beetroot myself I do honestly taste the difference.
The flavour is significantly better. It’s really down to preference as to whether you use raw beetroots and cook them yourself or pre-cooked ones. When making this salad to impress I cook the beetroot myself but when in a rush (which is most of the time) I use pre-cooked beets. This recipe works for both.
How to make the beetroot salad?
Peel and wash the beetroot. In a medium-size pot with boiling water boil the beetroot for 40 minutes, or until softened. If the beetroots are very large, or if you’re in a rush you can chop the beets in half and that will shorten the cooking time massively.
Once boiled and drained, chop the beetroot into chunks, no bigger than a dice. Place in a mixing bowl. Squeeze half a lemon and add juice into the beetroot. Crush the garlic and add in also. Add in the oil and salt and give the salad a nice stir, ensuring it’s mixed thoroughly. Enjoy!
Delicious Beetroot and Garlic Salad
Ingredients
- 4 beetroots
- 1/2 lemon squeezed
- 2 tbsp olive oil
- 1 clove garlic
- 1 tsp salt
Instructions
- Peel beetroot and boil in a pot of boiling water for around 40 minutes, or until softened.
- Dice into small cubes and place in a mixing bowl. Combine with lemon juice, crushed garlic, salt and olive oil. Enjoy!
