Air fryer courgette is my go-to healthy summer dish. It works perfectly as part of a lunch or a tapas style dinner, especially when you don’t want to put lots of effort into cooking. I serve with garlic yoghurt and it goes down an absolute treat.
The Simple Ingredients:
The flavour of this dish comes with the yoghurt. If there are inclusions you’d like to make, such as lemon juice or chives, add this into the yoghurt and serve alongside the courgette.
How to make the courgette?
Cut the courgettes in half vertically. Score the courgettes in a criss-cross pattern. Sprinkle the black pepper and pour the olive oil over the courgettes. Cook in the air fryer for 15 minutes at 200°C/392°F, or until cooked.
Whilst the courgettes cook, prepare the yoghurt. Crush the garlic and mix into the yoghurt with the salt. Serve with the yoghurt on the side, or dolloped onto the courgettes. You can also slice the courgettes into smaller pieces and mix into the yoghurt for a different result! It’s up to your preference. Enjoy!

- 2 courgettes
- 300 g yoghurt
- 1 clove garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
