Aubergine Hummus (Eggplant)

This is my air fryer aubergine hummus recipe! Whether you call it aubergine or eggplant, I guarantee you’ll find it delicious and irresistible. It works as a brilliant and interesting dip at a party and a beautiful starter at dinner. Whether you’re an aubergine lover or you’ve never given it a taste you will LOVE this gorgeous dish.

The Simple Ingredients:

Ingredients for recipe: aubergine (eggplant), tahini, yoghurt, lemon, garlic, seasonings and pine nuts.

This recipe tastes SO good with some chilli powder or chilli peppers – just a little bit of spice really gives this hummus a kick! My recipe doesn’t have spice so it works for everyone but feel free to add some chilli to taste. I added some chilli oil to mine when serving – simply too good.

You can add some pine nuts into the hummus or sprinkle some on top when serving – it compliments the dish quite well.

How to make the hummus?

Cook the aubergines in the air fryer at 200°C /392°F for 40 minutes, or until they are fully cooked through. Once cooked leave them to cool, then peel them and place in your blender. Blend with all of the other ingredients until smooth. Enjoy!

Ingredients

  • 2 aubergines around 550 g
  • 2 tbsp yoghurt
  • 1 tbsp tahini
  • 1 lemon squeezed
  • 1 tbsp olive oil
  • 1 clove garlic
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
