Where did I learn this recipe?

This recipe is one that came from my husband. He loves all things BBQ and in the winter months we really aren’t able to spend time outdoors to grill some chicken whenever we fancy (thanks a lot London weather!). 

We wanted a way to be able to get that grilled chicken taste at home, so we made this together. These wings are especially good for hosting lots of people. Wings are much cheaper than say breasts or drumsticks, so we like to make wings if we are hosting lots of people for a casual get together, for example. 

The Simple Ingredients:

If you like soft and juicy chicken, this is the best way you’ll achieve that taste. This recipe is very simple, here are the main ingredients:

The Key Techniques:

1. Leave it overnight.

Leaving the wings overnight makes a big difference in this recipe. Do not worry if you do not have time – the wings will still taste great. But the longer you leave it the more seasoning will seep into the chicken. I recommend leaving it for at least 8 hours, or overnight. This is one of my easiest recipes, despite the long wait time in the refrigerator. In fact, the long wait time in the fridge will be doing all of the heavy lifting for you.

2. Slice the skin.

I would highly recommend adding a couple of slices into each wing with a knife. This way the seasoning and oil can seep into the wings more and will give the wings much more flavour. My family don’t often make it with the skin, so we skip this step. If you are opting for a skinless wing dish, then this step is not needed.

3. Oil first.

Make sure to add the oil first and mix to coat all of the wings thoroughly. This will moisten the wings and allow you to mix the seasoning evenly and easily later on as the wings won’t be dry.

Juicy Chicken Wings

Servings: 27 wings

Ingredients

  • 27 wings
  • 10 tbsp olive oil use 7 tbsp only if you are making wings with skin on
  • 1 tsp salt
  • 1 and ½ tbsp sun-dried tomato paste salça
  • 1 tsp paprika
  • ¼ tsp cumin
  • ½ tsp black pepper
  • 2 cloves garlic

Instructions

  • Place the chicken wings in a large mixing bowl and add the seasonings.
  • Mix by hand until all wings are coated evenly.
  • Place some cling film or a lid over the mixing bowl and leave in the fridge overnight.
  • Preheat the oven to 200°C/392°F/gas 6. Take the wings out and place spread out on a baking tray. Bake for 1 hour or until crispy. Enjoy!
